Serves 2

1 avocado
2 portion packs of Doria Doriano crackers
Squeeze of lemon
Salt and pepper
50g feta cheese crumbled
Small handful of basil leaves roughly chopped plus a couple of whole ones to garnish
Extra virgin olive oil


  • Peel and stone the avocado, add the flesh to a small bowl and mash with a fork. Season with salt, pepper and a squeeze of lemon. Mix in the roughly chopped basil leaves.
  • Spread the avocado onto the Doriano crackers, top with the feta and whole basil leaves.
  • Finish with a drizzle of olive oil to serve.
