Serves 4-6

250g Ricotta cheese
Zest 1 lemon
1½ tbsp. Lemon juice
2 tbsp Extra virgin olive oil
100g Cherry tomatoes
Small bunch of basil
1/4 tsp. Chili flakes
Salt and pepper


  • Whisk together the ricotta, extra virgin olive oil, lemon juice and zest. Season to taste with salt and pepper.
  • Slice the cherry tomatoes. Top the crackers with the ricotta, sprinkle with a little cracked chilli and then top with the cherry tomatoes and basil.
