Makes 4

4 Cooking apples
6 dates
2 tsp golden raisins
6 heaped tsp soft brown sugar
3 tsp Amaretto liqueur
50g butter cut into small cubes squeeze of lemon
4 scoops vanilla ice cream
40g crushed Doria Amaretti biscuits
8 whole Doria Amaretti biscuits to serve


  • Preheat the oven to 180 Celsius
  • Prepare the ingredients, roughly chop the dates. Remove the core from the apples with an apple corer, hollow out the apples with a tsp and score around the circumference to prevent the apple from splitting during cooking.
  • Mix the removed apple with 4 tsp of the soft brown sugar, amaretto liqueur, the cubed butter, chopped dates, raisins, a squeeze of lemon and the crushed Amaretti. Stuff the mixture back into the apples, pressing the mixture down with the back of a teaspoon. Place in a high sided oven proof dish, add 1 cm of boiling water to the tray.
  • Bake in the oven for 20-25 minutes or until the apples are soft and bubbling. Remove the apples from the baking tray and keep warm, pour the remaining juices from the dish into a small pan over a medium heat, add the remaining soft brown sugar and reduce until thicken and sticky.
  • Serve the apples with a scoop of vanilla ice cream and the whole Amaretti biscuits on the side. Pour over the sticky juices to finish.
