150g butter
125g golden syrup
45g cocoa powder
150g Amaretti biscuits
100g raisins
50g glace cherries, halved
50g whole almonds
50g shelled pistachios
300g plain chocolate


  • Grease and line the base and sides of a 20cm/8in square tin. Melt the butter, syrup and cocoa together, whisking until the mixture is smooth. Remove from the heat.
  • Crumble the Amaretti biscuits into large pieces, then add to the pan along with the raisins, cherries, almonds and pistachios and mix well. Tip the mixture into the prepared tin and smooth the surface with the back of a spoon.
  • Break the chocolate into a bowl and place it over a pan of simmering water, stir until melted. Remove from the heat and pour the chocolate over the surface of the biscuit mixture. Tap the tin to level the chocolate and cool. Refrigerate until set.
  • To serve, remove from the fridge 20 mins before serving, cut into bars or squares,
